What do you get when a prestigious sparkling wine maker from Valencia Spain makes wine from local grapes then leaves the wine in rack for 8 years making the bottle aging a total of 8 years before disgorging and finishing? You get Cava perfection!

This is eye catching, golden yellow with great bubble integration. A nose and mouth pleasing deep on the palate wine. What a great Cava! This wine will inspire.  

Style: Brute, Sparkling white wine.

Vintage: 2007

Region: D.O. .

Varieties: 60% Chardonnay and 40% Macabeo (Viura).

Vinification & aging: The grapes are hand picked into small crates, and then taken to the winery where they are pressed. Each grape variety is fermented at around 16 to 18 C to produce the base wine. A blend is then made, yeast and more sugar is added and the wine is bottled with a crown cap. In an underground cellar, the second fermentation takes place in the bottle, followed by 8 years aging on the lees. Finally, the bottles are disgorged to remove the yeast and the bottle is topped up with the same wine, with a small amount of cane sugar being added corked and wire tied.  

Aging: 8 years in bottle with yeast.

Tasting notes: . Complex and subtle aromas of stone fruits (apricot, peach) raisins, and roasted apple, notes to flower of honey, vanilla, minerals and toasts. The initial palate is dry and creamy with fine bubbles. There are toasted notes with a long and elegant finish.

Food pairing suggestions: Hors d'oeuvres, Caviar, fruits and chocolates. Or simply take everything off and enjoy with your partner while soaking in the hot tub!
