2013 Pago Florentino Tempranillo
The 2013 Pago Florentino is quickly becoming a sought after legend...
After tasting this vintage we purchased the entire vintage. This is as close to the 2005 vintage that made us fall in love with Spain years ago. 100% Tempranillo (called Cencibel in the region), cold macerated, and spends 10-15 months in new American and French oak. The 58 hectare estate, known as La Solana, is located at high elevations in the municipality of Malagon, in the province of Ciudad Real or Castile La Mancha. The term "Pago" denotes the quality level and consistency that the requirement of "everything at the bodega" brings. From grape to labeling, all is done onsite at La Solana.

Varietal: 100% Tempranillo (Cencibel).
Winemaking Notes: The grapes are picked, sorted and kept very cold during maceration in order to extract as much color and flavor from the grape skins. A long fermentation is controlled again to continue extraction of flavors. Finally, aged 12-15 months in new French and American oak barrels.
Tasting Notes: Toasted pistachio, BBQ and spice nose. A big, ripe stone fruit up front mixed with smoky ash and that Pago signature character trait of bacon fat that is unlike anything else you will drink. Round, balanced tannins and a long, luxurious finish.
Pairing Suggestions: Extremely food-friendly but also great alone. Pago works great with your favorite Manchego or other hard cheeses and is versatile enough to pair with bigger entrees like steak, lamb and BBQ.
